Banana Muffins

Being jobless and bored is making me cook/bake more :))

Here’s another recipe for you guys to try! Recipe fromĀ Joy of Baking.

Ingredients I used:

  • handful of pecansĀ (all I had)
  • 1 3/4 cup all purpose flour
  • 1/2 cup granulated white sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 large eggs, lightly beaten
  • 1/2 cup unsalted butter, melted and cooled
  • 2 ripe large bananas, mashed well
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix eggs, butter, bananas, and vanilla extract.
  3. In another bowl, mix all the dry ingredients, including the chocolate chips and pecans.
  4. Fold in the wet ingredients to the dry ingredients.
  5. Butter or spray muffins tins, or use muffin liners.
  6. Place about 1/2 cup per tin.
  7. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.
  8. Place on wire rack for 5 minutes and then remove from muffin tin.
  9. Enjoy!

Cinnamon Oatmeal

Inspired by Missglamorazzi’s video below.

I just used half of the ingredients for my oatmeal.

Ingredients:

3/4 cup water
3/4 cup milk
1/2 cup oatmeal (I used quick cook oatmeal)
1 banana
Dash of brown sugar
Cinnamon

Directions:

  1. In medium heat, combine water and milk in a pot.
  2. Once the liquids boil, lower heat and add in oatmeal.
  3. Squish some bananas and add it in to the pot.
  4. Keep stirring until the liquids have been more or less absorbed by the oatmeal.
  5. Remove from heat. Add in a dash of brown sugar and cinnamon.

Enjoy!

Chinese Sausage Fried Rice

Made something cause I was hungry and bored!! :))

Ingredients:

  • 2 cups old rice
  • 3 chinese sausage, chopped
  • 2 eggs, beaten
  • soy sauce
  • 2 cloves garlic, minced
  • 1 small onion, chopped

Directions:

  1. Heat pan over medium high heat.
  2. Lower head and add oil to pan, then add in the onion and garlic.
  3. Stir in the chopped chinese sausage until cooked.
  4. Add in rice and about 1-2 tablespoons of soy sauce.
  5. Stir in the beaten eggs and continue stirring until the eggs have dried/scrambled.
  6. Serve hot!
